I have a used Meade telescope (not electric other than Starfinder); I can see the moon, but have to look “around” the mirror – a reflection of my eye and the eyepiece itself covers up the middle of my field of vision. I put my hand inside the tube, and the mirror does not appear to be moveable.

This is completely normal for a Newtonian reflector telescope…in fact it indicates that your telescope is properly collimated (aligned).
Actually, you should only see a reflection of your own eye when you look into the eyepiece holder without an eyepiece in it. It should look like this:

to get replacement-my grandson put it together and the box and any instruction sheets were thrown away- there isn’t any info on the telescope itself other than the name VIVATAR- thanks for any info you may provide

The typical dobsonian telescope owner upgrades it by adding various finder scopes to help aim the telescope. In addition to a 2 inch premium eyepiece mine has a green laser pointer, a Telrad, a 50mm finder scope, and a Meade red dot scope. All of this additional weight on the front end of the telescope makes it want to nose dive, so counter weighting at the other end is the proper solution.
Robert Thompson’s book called "Astronomy Hacks" suggests an innovative solution – magnets. At various flea markets I have bought old worn out speakers for next to nothing, and taken them apart just to salvage the magnet.
